Preheat oven to 375 degrees F. Coat a 8x8 baking pan with cooking spray.
Cook the tortellini al dente for two minutes less than the time goven on the package. Drain.
Meanwhile, wash and halve the tomatoes. Grate parmesan cheese.
Place the tortellini in a large bowl. Carefully stir in alfredo sauce, diced chicken, tomatoes, cottage cheese, and garlic powder until combined. Place this in the baking dish and spread out gently to evenly distribute. Sprinkle the cheeses over top.
Bake for 25 minutes or until cheese is melted and light golden brown on top. Cool slightly before cutting into servings. Freezes well, supposedly.
Calories: 502 per quarter. Honestly not fucking worth it since the final result is sort of pink and gross.
